June Pics

Windy

Here are some pics from the last couple of weeks. During which time we went to Petty at the Gorge and other than all the waiting it totally rocked. That guys is a rock star and I am going to miss him dearly when he's gone. That's why I am convinced that he is going to live forever because no one should be able to make that much good music in one life time. We also had some company for bbq pizza (the pics of it didn't turn out so I apologize) and grubbed our asses off. Then the next day was by brother in law's baby shower which as pretty cool. Let me tell you dudes, baby showers suck except for pacific islander baby showers. Trust me if you like to eat then you need to go to one. Just marry a Hawaiian girl like I did and you will be in in no time. Anyways let me know what you think.

May and June 2010

Man what a couple of weeks. Weekend one was spent at Late Cushman in the Olympic Mountains and the second getting tattooed and BBQing with the family. It's really nice having great friends and family around to share life and shoot the shit with. I love them all and it wouldn't be the same without you all.

BBQ Meat Loaf

Okay so I have been meaning to write this up for a while so hear we go. I really enjoy making this and people really dig it. If you have any questions please feel free to email me.

What you will need:
- 1 pound of ground beef or turkey
- 1 pound of ground country sausage
- 1 - 2 pounds of bacon
- 2 eggs, whhhhipped
- 1 onion grated
- 2 cloves garlic minced
- 3/4 ++ fresh bread crumbs
- 1/2 cup of ketchup
- 1/2 ++ your favorite bbq sauce
- 1/2 cup jalapeños chopped
- 1 tablespoon of Worcestershire sauce
- Salt and pepper

Step 1: Weave the bacon into a lattice. The easiest way to do this to watch this video. It should look like this when you are done.

If you are BBQing this then I would recommend rubbing it down with some of your favorite BBQ rub. Here is mine if you are interested.

Step 2:
Combine the ground beef/turkey, sausage, eggs, onion, garlic, ketchup, BBQ sauce, Worcestershire sauce, S & P and bread crumbs in a large bowl with your hands until it's all combined. If it's not setting up and is still kind of runny, add more bread crumbs until the mixture has the consistency you are looking for.

Step 3:
Now you want to lay your meat mixture (hahaha) on top of your beautiful bacon blanket. It should look like this when you are done.

Optional Step:
If you want to add cheese and veggies to the inside of this then now is the time to do it. I would recommend some sautéed onions and peppers and cheese but keep in mind you are only going to get this thing to about 150 - 160 degrees internally which isn't cheese melting hot.

Step 4:
Now it's time to roll this meat mixture up into some sort of a log form. You want the log to be formed on one end of the bacon lattice or the other. When you have the log rolled up now it's time to wrap the bacon around it.

When you are done season it up with S&P or your BBQ rub it should look like this.

Step 5:
There are 2 ways of cooking this and the way I prefer is smoking it on the BBQ using indirect heat. If you need an explanation on indirect heat check here. So basically you place a drip pan underneath it with about a half an inch of water in it and put the meat loaf directly on the grill. If you are smoking it periodically throw more water soaked wood chips on the charcoals or in your smoke box. Try to keep the temperature around 300 degrees and it should take about 3 hours or so or when a thermometer reads 160 degrees and should look something like this.

Step 6:
This step is pretty simple, take your favorite BBQ sauce and smother it all over the meat loaf then let is rest for about 15 minutes to give all the juices inside to settle down.

This is my favorite step, cut in and enjoy.

5.22.2010

Now I know that it has been a while since I last posted one of these but it has been for a good reason. That reason being that we moved and I didn't have a chance to edit any pics until this holiday weekend. There's all different kinds of shit in here to look at and I have a BBQ meatloaf blog to write up as well so stay tuned. Let me know what you think and if you want any of these pics let me know.
